It's one of those nights where you want something filling and satisfying but your wallet and your energy are both running low. This burrito bowl delivers — seasoned black beans, fluffy rice, a quick pico-style tomato topping, and whatever you've got for toppings. It's honest, cheap food that actually tastes good. No fancy technique, no special equipment, and the leftovers are excellent for lunch tomorrow. Make a big batch on Sunday and you're set for the week. Expect a wholesome, slightly smoky, deeply satisfying bowl that costs maybe $2 a serving.

Ingredients

  • 1.5 cup long-grain white rice — rinsed
  • 3 cup water — for cooking rice
  • 1 tsp salt — divided
  • 2 unit cans black beans (15 oz each) — drained and rinsed
  • 3 unit garlic cloves — minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika
  • 2 tbsp olive oil — divided
  • 2 unit roma tomatoes — diced
  • 0.5 unit small white onion — finely diced
  • 1 unit lime — juiced
  • 2 tbsp fresh cilantro — chopped; optional but recommended
  • 1 unit avocado — sliced or diced; optional
  • 1 pinch red pepper flakes — optional, for heat

Method

  1. 1 Combine the rinsed rice, water, and a half teaspoon of salt in a medium saucepan. Bring to a boil over high heat, then reduce to the lowest simmer, cover tightly, and cook for 18 minutes. Remove from heat and let it steam, covered, for 5 minutes. Fluff with a fork.
  2. 2 While the rice cooks, make the quick pico: combine the diced tomatoes, half the diced onion, half the lime juice, cilantro, and a pinch of salt in a small bowl. Stir and set aside.
  3. 3 Heat 1 tablespoon of olive oil in a medium skillet over medium heat. Add the remaining onion and cook for 3–4 minutes until softened.
  4. 4 Add the minced garlic and cook for 30 seconds, stirring constantly, until fragrant.
  5. 5 Add the cumin, chili powder, smoked paprika, and red pepper flakes if using. Stir into the onion and garlic for about 30 seconds to bloom the spices.
  6. 6 Add the drained black beans and remaining half teaspoon of salt. Stir to coat the beans in the spices. Add a splash of water (about 3 tablespoons) and cook for 5–6 minutes over medium-low heat, stirring occasionally, until the beans are heated through and slightly saucy. Taste and adjust salt.
  7. 7 Squeeze the remaining lime juice over the beans and stir in the remaining tablespoon of olive oil for richness.
  8. 8 To assemble: spoon rice into bowls, top with the seasoned beans, pico, and avocado if using. Serve immediately.

Variations

  • Add a fried egg on top — Fry an egg per bowl and lay it on top — adds protein and richness for about $0.30 extra per serving. The runny yolk acts like a sauce.
  • Faster swap: canned rice or microwave rice — Use two pouches of microwave rice (about 90 seconds each) to cut total time to under 15 minutes. Costs a bit more but saves significant effort on tired nights.
  • Heartier swap: add frozen corn — Stir half a cup of frozen corn into the beans in the last 2 minutes of cooking. Adds sweetness, bulk, and color for almost no extra cost.
  • Cheesy version — Top each bowl with a handful of shredded cheddar or Monterey Jack right before serving. Makes it feel more indulgent and adds a little more protein.

Notes

Total cost is typically $6–$9 depending on avocado price — skip the avocado to stay firmly under $7. The beans reheat beautifully with a splash of water in a skillet or microwave. Rice keeps well in the fridge for 4 days. Store components separately for best texture on leftovers.

Equipment that helps

  • Medium saucepan with a tight-fitting lid — A good seal traps steam so the rice cooks evenly without drying out or getting mushy.
  • Medium skillet — A wide surface lets the beans cook in a single layer so they absorb the spices quickly and evenly.
