Budget-Friendly Sheet-Pan Salmon
Skip the fancy grilling equipment; this sheet-pan method gives you that same buttery flavor in half the time.
When you're exhausted and just want a solid dinner without the mountain of dishes, this roasted salmon is your best friend. It captures that signature smoky, herb-forward profile of traditional cedar-plank cooking but simplifies it into a single baking sheet process. You don't need to source specialty wood or manage a fire; the heavy hitters here are fresh lemon and savory herbs. The high heat of the oven creates a beautiful crust on the outside while keeping the inside flakey and moist. It’s an incredibly satisfying way to feel like you're cooking something 'fancy' when your brain is just looking for an easy win. That hit of citrus at the end really wakes up the palate, making it feel much more elevated than a standard weeknight meal.
Ingredients
- 1.5 lb Salmon fillet — cut into 4 portions
- 2 unit Lemon — thinly sliced
- 3 tbsp Butter — melted
- 1 tsp Garlic powder
- 1 tsp Dried dill
- 0.5 tsp Salt
- 0.25 tsp Black pepper
Method
- 1 Preheat your oven to 400°F and line a large baking sheet with parchment paper or aluminum foil.
- 2 In a small bowl, whisk together the melted butter, garlic powder, dill, salt, and pepper.
- 3 Place the salmon fillets on the prepared baking sheet. Brush the butter mixture generously over each piece of fish.
- 4 Tuck the lemon slices between and over the salmon pieces for extra flavor.
- 5 Roast in the oven for 10–12 minutes, or until the salmon flakes easily with a fork.
- 6 Remove from oven and let rest for 5 minutes before serving.
Variations
- No-Butter Option — Substitute the melted butter with 2 tablespoons of olive oil for a lighter take.
- Herb Swap — Replace the dried dill with dried rosemary or thyme if you prefer an earthier flavor profile.
Notes
If you want an extra kick of flavor, add a pinch of red pepper flakes to the butter mixture. If your salmon is room temperature before it goes in the oven, it will cook more evenly.
Equipment that helps
- Baking Sheet — Allows for easy cleanup and ensures even roasting of the fish.
