Spicy Tuna Poke Bowl
Stuck on dinner? Make this spicy tuna poke bowl and skip the decision spiral.
When you’re too tired to browse recipes but still want something fresh, this is the move. A poke bowl gives you a complete dinner with almost no cooking: seasoned rice, tuna, crunchy cucumber, creamy avocado, and a spicy-salty sauce that makes it feel like you tried harder than you did. It’s best when you want dinner in 20 minutes, have a can of tuna or pre-cooked tuna handy, and need something satisfying without a pile of pans. Expect a light, balanced bowl with big flavor, not restaurant-style sashimi poke. It’s deliberately low-friction, very customizable, and easy to eat straight from the bowl.
Ingredients
- 1.5 cup cooked white rice — warm
- 10 oz tuna — drained; canned tuna or pre-cooked tuna works
- 2 tbsp mayonnaise
- 1 tbsp sriracha
- 1 tbsp soy sauce
- 1 unit cucumber — thinly sliced
- 1 unit avocado — sliced
- 2 tbsp scallions — thinly sliced
- 1 tbsp sesame seeds — for topping
Method
- 1 Warm the rice and divide it between 2 bowls.
- 2 In a small bowl, mix the tuna, mayonnaise, sriracha, and soy sauce until coated.
- 3 Top each bowl of rice with the spicy tuna, cucumber, avocado, scallions, and sesame seeds.
- 4 Eat right away while the rice is warm and the toppings are cool.
Variations
- Vegetarian swap — Swap the tuna for cubed extra-firm tofu or shelled edamame and season the same way.
- Faster swap — Use microwave rice and pre-sliced cucumber, then assemble the bowl in 5 minutes.
- Substitutions — No sriracha? Use chili garlic sauce or a pinch of red pepper flakes; no avocado? Add extra cucumber or shredded carrots.
Notes
If using canned tuna, choose tuna packed in water or olive oil and drain it well so the bowl stays fresh, not soggy. For a stronger poke-style feel, chill the tuna mixture for 5 minutes before serving. Keep hot rice and cold toppings separate until the last minute for the best texture.
Equipment that helps
- small bowl — It lets you mix the tuna sauce without dirtying a big dish.
- microwave-safe bowl — It warms the rice quickly so dinner feels complete with almost no effort.
