Cheap Egg Fried Rice with Frozen Vegetables (20-Minute Dinner)

When you're wiped out and the fridge looks like a sad still life, this is the recipe to reach for. Egg fried rice is one of the most forgiving, fastest cheap dinners on the planet — and the frozen vegetable version is the weeknight shortcut the takeout version never tells you about. You get real wok-style flavor from a regular skillet, a satisfying mix of textures, and a filling meal for around $2–3 total. Day-old rice works best (it fries up less mushy), but fresh rice cooled for even 10 minutes will do the job. Honest expectation: it's simple, a little savory, a little eggy, and genuinely good.
Ingredients
- 2 cup cooked white rice — day-old and cold is ideal; spread fresh rice on a plate to cool 10 min if needed
- 3 unit large eggs
- 1.5 cup frozen mixed vegetables — peas, carrots, corn, green beans — any mix works
- 3 unit garlic cloves — minced; or 1 tsp garlic powder in a pinch
- 3 tbsp soy sauce — low-sodium if you have it
- 1 tsp sesame oil — optional but adds a lot of flavor for cheap
- 2 tbsp neutral oil — vegetable, canola, or any high-heat oil
- 2 unit green onions — sliced thin; whites and greens separated
- 0.5 tsp white pepper — or black pepper; white pepper is more traditional
- 1 pinch salt — to taste at the end
Method
- 1 Pull your rice out of the fridge and break up any clumps with your hands or a fork — cold, separated grains fry much better than a solid block.
- 2 Crack the 3 eggs into a small bowl, beat them lightly with a fork, and set aside.
- 3 Heat a large skillet or wok over high heat until very hot — about 2 minutes. Add the neutral oil and swirl to coat.
- 4 Add the frozen vegetables straight from the freezer. Spread them out and let them cook undisturbed for 2 minutes so they get a little color, then stir and cook 1 more minute until thawed and starting to brown at the edges.
- 5 Add the minced garlic and the white parts of the green onions. Stir constantly for 30 seconds until fragrant.
- 6 Add the cold rice. Use a spatula to press it flat against the pan and let it sit undisturbed for 1–2 minutes — this builds the slightly crispy bottom that makes fried rice taste like fried rice, not steamed rice.
- 7 Stir everything together, breaking up any remaining clumps, then push the rice to one side of the pan.
- 8 Pour the beaten eggs into the empty side of the pan. Let them set for about 20 seconds, then scramble them gently. Before they're fully cooked, fold them into the rice and stir everything together.
- 9 Drizzle the soy sauce and sesame oil over the rice. Toss and stir-fry for another 1–2 minutes until everything is coated and fragrant.
- 10 Season with white pepper and taste for salt. Serve immediately topped with the green parts of the green onions.
Variations
- Add a protein boost — Stir in a can of drained chickpeas or white beans with the vegetables for extra protein without spending much more. Edamame (frozen) works great too.
- Spicy version — Add 1–2 tsp chili garlic sauce or sriracha with the soy sauce for a quick kick that makes this feel a lot more interesting.
- No fresh garlic swap — Use 1 tsp garlic powder and 0.5 tsp onion powder instead of fresh garlic and green onions — it still works fine and saves a step.
- Soy-free version — Swap soy sauce for coconut aminos (same amount) for a slightly sweeter, soy-free alternative that's easy to find at most grocery stores.
Notes
The single biggest upgrade you can make here is high heat — don't be shy about cranking the burner. A lukewarm pan makes soggy fried rice. If your skillet is small, cook in two batches rather than crowding it. Leftovers reheat okay in a skillet with a splash of water, but the texture is best fresh.
