Ingredients
- 1 cup dried green or brown lentils — rinsed

- 1 unit medium yellow onion — diced
- 2 unit medium carrots — diced
- 2 unit celery stalks — diced
- 3 unit garlic cloves — minced

- 1 tsp dried thyme
- 1 tsp smoked paprika
- 1 cup frozen peas
- 1 tbsp olive oil
- 1 tsp salt — divided, plus more to taste

Method
- 1 Preheat your oven to 400°F. Add the rinsed lentils and water or broth to a medium saucepan. Bring to a boil, then reduce heat and simmer uncovered for 20–22 minutes, until lentils are tender but not mushy. Drain any excess liquid and set aside.
- 2 While the lentils cook, place the potato chunks in a separate pot and cover with cold salted water. Bring to a boil and cook for 12–15 minutes until fork-tender.
- 3 Meanwhile, heat olive oil in a large oven-safe skillet over medium heat. Add the onion, carrots, and celery with a pinch of salt. Cook, stirring occasionally, for 6–7 minutes until softened.
- 4 Add the garlic, tomato paste, thyme, and smoked paprika to the skillet. Stir and cook for 1–2 minutes until fragrant and the tomato paste darkens slightly.
- 5 Add the cooked lentils, soy sauce, frozen peas, ½ tsp salt, and ¼ tsp black pepper to the skillet. Stir everything together and cook for 2 minutes. Taste and adjust seasoning. Remove from heat.
- 6 Drain the potatoes and return them to the pot. Add butter, milk, remaining ½ tsp salt, and ¼ tsp black pepper. Mash until smooth and creamy. Taste and adjust seasoning.
- 7 Spoon the mashed potatoes over the lentil filling in the skillet and spread into an even layer with a spatula. Use a fork to create ridges on top — these will get golden and crispy in the oven.
- 8 Bake at 400°F for 15–18 minutes until the top is lightly golden. For extra color, broil for the last 2–3 minutes, watching closely. Let rest 5 minutes before serving.
Variations
- Vegan Version — Use olive oil instead of butter and unsweetened oat or almond milk in the mashed potatoes. The rest of the recipe is already vegan.
- Faster Stovetop Version — Skip the oven entirely — just pile the mashed potatoes on top of the lentil filling in the skillet, cover with a lid, and heat on low for 5 minutes. You lose the golden crust but cut the time by 20 minutes.
- Add Mushrooms — Dice 6 oz of cremini mushrooms and cook them with the onion and carrots for extra meaty texture and umami depth — still well under $10 total.

If you don't have an oven-safe skillet, transfer the lentil filling to a greased 9x13-inch baking dish before topping with mashed potatoes. Lentils vary — green hold their shape best here; red lentils will cook faster (about 12 minutes) but get mushier, which still works.
