Easy Tofu Japchae Stir-Fry

When you're exhausted but want something more special than just basic pasta, this Tofu Japchae is your secret weapon. It uses chewy glass noodles (or sweet potato starch noodles) tossed with protein-packed tofu and crunchy veggies. It feels like a gourmet hug in a bowl—savory, slightly sweet, and incredibly satisfying. You don't need to be a master chef; the flavors meld beautifully in one pan, making it perfect for those nights when you want a 'real meal' without the mental heavy lifting.
Ingredients
- 8 oz firm tofu — pressed and cubed
- 10 oz sweet potato starch noodles — or glass noodles
- 2 cup spinach — roughly chopped
- 1 unit carrots — julienned or thinly sliced
- 3 unit green onions — sliced
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp sugar
- 1 pinch garlic powder
- 1 tbsp toasted sesame seeds
Method
- 1 Boil the noodles according to package instructions (usually 6-7 minutes). Drain and rinse with cool water.
- 2 In a large skillet, heat 1 tbsp of oil over medium-high heat. Sauté the cubed tofu until golden on all sides, then remove from pan and set aside.
- 3 In the same skillet, add carrots and green onions. Sauté for 3 minutes until slightly softened.
- 4 Add the spinach to the skillet and cook until wilted (about 1-2 minutes).
- 5 Return the tofu to the pan and add the cooked noodles. Pour in the soy sauce, sesame oil, sugar, and garlic powder.
- 6 Toss everything together for 3-5 minutes so the flavors meld and the noodles soak up the sauce.
- 7 Garnish with sesame seeds before serving.
