When the day feels long and you just want something warm to lean into, this Tofu Jjigae is your best friend. It’s a classic Korean stew that packs a punch of savory umami without requiring hours over a hot stove. We're stripping away the complex prep while keeping the soul of the dish—think deep flavors from gochugaru and garlic. It’s hearty enough to feel like a real meal but simple enough to whip up when your brain is fried. Expect a rich, slightly spicy broth that coats everything perfectly. Serve it with some rice, and you're done for the night.

Ingredients

  • 1 lb firm tofu
  • 2 cup vegetable broth
  • 3 tbsp gochugaru (Korean chili flakes)
  • 4 unit garlic cloves — minced
  • 1 tbsp soy sauce
  • 1 tsp ginger — fresh, grated
  • 2 cup sliced mushrooms
  • 1 cup spinach or bok choy
  • 1 tsp sesame oil

Method

  1. 1 Slice the tofu into thick rectangles and lightly sear in a pot with a splash of sesame oil until slightly golden.
  2. 2 Add the mushrooms and sauté for 3-4 minutes until they begin to soften.
  3. 3 Stir in the minced garlic, grated ginger, and gochugaru. Sauté for 1 minute—be careful not to burn the chili flakes!
  4. 4 Pour in the vegetable broth and soy sauce. Bring the mixture to a boil over medium-high heat.
  5. 5 Reduce heat to medium-low and let it simmer for 10 minutes to develop the flavors.
  6. 6 Stir in the greens (spinach or bok choy) and cook for another 2 minutes until wilted.
  7. 7 Taste and add a pinch more soy sauce if you want it saltier. Serve hot.

Variations

  • Faster Prep — Use pre-minced garlic from a jar to shave off 5 minutes of prep time.
  • Veggie Boost — Add diced zucchini or sliced carrots during the simmering step for more texture.

Notes

If you can't find gochugaru, you can use a mix of cayenne pepper and smoked paprika, though the flavor won't be as traditional.

Equipment that helps

  • Large Pot or Dutch Oven — Allows you to sear the tofu and simmer the broth in one vessel for easy cleanup.
