Caprese Avocado Toast Dinner — 15 Minutes, Few Ingredients
No cooking, no stress — just smash, stack, and eat in 15 minutes.
It's one of those nights where you're too tired to actually cook, but you still want something that feels like a real dinner. This is it. You smash ripe avocado onto thick toast, layer on fresh mozzarella and tomato, drizzle with olive oil and balsamic, and you're done. It tastes like you tried. Honest expectations: this is light — pair it with a handful of nuts or a simple side salad if you're extra hungry. But for most tired weeknights, two loaded slices is exactly enough.
Ingredients
- 4 unit thick-cut bread slices — sourdough or country bread works best
- 2 unit ripe avocados — halved and pitted
- 1 unit large ripe tomato — or 1 cup cherry tomatoes, halved
- 4 oz fresh mozzarella — sliced into rounds; low-moisture works too
- 0.5 cup fresh basil leaves
- 2 tbsp extra-virgin olive oil
- 1 tbsp balsamic glaze — store-bought is fine
- 1 unit garlic clove — halved, for rubbing the toast
- 0.5 tsp flaky sea salt
- 0.25 tsp black pepper — freshly cracked
- 0.5 tsp red pepper flakes — optional, for heat
Method
- 1 Toast the bread slices in a toaster or under the broiler on high until golden and crisp, 2–4 minutes. Watch closely under the broiler.
- 2 While the bread is still hot, rub each slice once or twice with the cut side of the garlic clove — the heat helps the garlic melt right in.
- 3 Scoop the avocado flesh into a small bowl. Add a pinch of salt and a few cracks of black pepper, then smash with a fork to your preferred texture — some people like chunky, some like smooth.
- 4 Spread the smashed avocado generously over each slice of toast.
- 5 Layer the fresh mozzarella slices evenly over the avocado on each toast.
- 6 Top with sliced tomato. If using cherry tomatoes, scatter them cut-side up.
- 7 Tuck fresh basil leaves over the tomatoes.
- 8 Drizzle each toast with olive oil, then finish with a drizzle of balsamic glaze.
- 9 Sprinkle with flaky sea salt, cracked black pepper, and red pepper flakes if using. Serve immediately.
Variations
- Vegan swap — Skip the mozzarella and add extra avocado plus a handful of arugula or thinly sliced cucumber for texture and freshness.
- Faster swap — Use pre-made guacamole instead of smashing your own avocado — it saves a step and still tastes great.
- Add protein — Top with a soft-boiled or fried egg for a more filling dinner — just cook the egg while the bread toasts.
Notes
The best avocado toast dinner is one where everything is fresh and eaten right away — the toast softens fast once topped. If your tomatoes are watery, pat them dry with a paper towel before layering to keep the toast from getting soggy. A squeeze of fresh lemon juice on the avocado adds brightness and slows browning if you need a few extra minutes.
Equipment that helps
- Toaster or broiler — A hot, crispy base holds the toppings better than soft bread and gives the whole thing structure.
