A quick sear builds crispy edges, then lemon juice and garlic go in to make a simple pan sauce that tastes way more intentional than the effort required. No marinating, no fancy technique. Ingredients

  • 1.5 lb boneless skinless chicken thighs — about 6 thighs; pat dry with paper towels for better sear
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 2 tbsp olive oil
  • 4 unit garlic cloves — minced or pressed
  • 1 unit lemon — zested and juiced; about 3 tbsp juice
  • 2 tbsp chicken broth — or water in a pinch
  • 1 tbsp fresh parsley — chopped; optional but brightens the dish

Method

  1. 1 Pat chicken thighs completely dry with paper towels. Season both sides with salt and pepper.
  2. 2 Heat olive oil in a large skillet over medium-high heat until shimmering, about 1 minute.
  3. 3 Add chicken thighs smooth-side down in a single layer. Do not move them. Sear for 5–6 minutes until deep golden brown and they release easily from the pan.

Variations

  • Vegetarian swap — Use 1.5 lb extra-firm tofu, pressed and sliced into 1-inch slabs, in place of chicken. Sear 3–4 minutes per side until golden. The lemon-garlic sauce works beautifully — just swap chicken broth for vegetable broth.
  • Even faster swap — Use thin-sliced chicken cutlets instead of thighs — they cook in about 3 minutes per side, shaving 4–5 minutes off total time.
  • No fresh lemon — Use 2 tbsp bottled lemon juice plus 0.5 tsp lemon zest from a tube (or skip the zest). Not quite as bright, but totally works on a tired Tuesday.

Notes

Drying the chicken thoroughly is the single most important step — moisture is the enemy of a good sear. If your thighs are very large, give them an extra minute per side and always check with a thermometer. Leftovers reheat well in a covered skillet over low heat with a splash of water to loosen the sauce.
