If your brain is fried from a long day and the only thing you want is a hot meal without any fuss, this stir-fry is your best friend. It hits that perfect sweet spot of being incredibly fast to cook while still feeling like an actual 'real' dinner because of the bold garlic and ginger notes. The shrimp provide a satisfying protein punch, and the snap of the asparagus keeps it light. You can whip this up in about 15 minutes total, making it ideal for those nights when you just need something nourishing before crashing on the couch. That hit of toasted sesame oil at the end provides a gorgeous aroma that makes your kitchen feel like a high-end bistro.

Ingredients

  • 0.5 lb large shrimp — peeled and deveined
  • 1 lb asparagus — woody ends trimmed, cut into 2-inch pieces
  • 3 unit garlic cloves — minced
  • 1 unit thumb-sized piece of ginger — grated or finely minced
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 pinch red pepper flakes — optional for a kick
  • 1 tbsp cooking oil

Method

  1. 1 Heat the cooking oil in a large skillet or wok over medium-high heat.
  2. 2 Add the shrimp and cook for 2 minutes until they just begin to turn pink. Remove shrimp from the pan and set aside.
  3. 3 In the same pan, add the asparagus and sauté for 3-4 minutes until bright green and slightly tender.
  4. 4 Add the garlic, ginger, and red pepper flakes; sauté for 1 minute until fragrant.
  5. 5 Return the shrimp to the pan. Pour in the soy sauce and stir well to coat everything.
  6. 6 Drizzle with sesame oil and toss for one final minute before serving.

Variations

  • Vegetarian Swap — Replace the shrimp with 1 block of extra-firm tofu, pressed and cubed.
  • Extra Veggie Boost — Add sliced bell peppers or baby bok choy along with the asparagus.

Notes

If you want extra volume, throw in a handful of snap peas or sliced carrots during step 3. Make sure not to overcook the shrimp—they should be firm but snappy!

Equipment that helps

  • Large Skillet — Allows for fast, even cooking of both the vegetables and the protein.
