Lemon Garlic Butter White Fish Steaks
Need a high-reward meal in under 25 minutes? This buttery, garlicky fish is the ultimate low-effort luxury.
When the day feels long and your energy is low, you need a dinner that feels like an event without the effort of a marathon. These white fish steaks are my secret weapon for those nights; they cook incredibly fast while infusing with a rich, zesty butter sauce that tastes like something from a bistro. You don't have to spend an hour over a hot stove—the high heat sears the fish quickly, locking in moisture and creating a beautiful crust. It’s elegant enough to feel special but simple enough to make while you're still in your pajamas. The bright hit of lemon zest against the mellow garlic creates that perfect 'I can't believe I made this in 20 minutes' feeling.
Ingredients
- 2 unit white fish steaks — Cod, Tilapia, or Halibut work perfectly
- 3 tbsp butter — unsalted preferred
- 2 tbsp olive oil
- 4 unit garlic — minced
- 1 unit lemon — half sliced for garnish, half juiced
- 0.5 tsp dried oregano
- 1 pinch salt
- 1 pinch black pepper
Method
- 1 Pat the fish steaks very dry with paper towels. This is the secret to getting a good sear rather than steaming.
- 2 In a small bowl, mix the olive oil, minced garlic, oregano, salt, and pepper. Rub this mixture evenly over both sides of the fish.
- 3 Heat a heavy skillet over medium-high heat. Add 1 tablespoon of the butter and 1 tablespoon of the oil (the oil prevents the butter from burning).
- 4 Place the fish in the pan. Sear for 3-4 minutes per side, or until the fish is opaque and flakes easily with a fork.
- 5 During the last 2 minutes of cooking, add the remaining 1 tablespoon of butter and the lemon juice to the pan. Swirl the pan to coat the fish in the bubbling butter.
- 6 Top with the lemon slices and serve immediately.
Variations
- Herb-Heavy Version — Swap the oregano for 1 tablespoon of fresh chopped parsley and thyme for a brighter, earthier flavor.
- Quick Veggie Add-in — Toss a handful of baby spinach into the pan during the final minute of cooking; it will wilt perfectly in the lemon butter.
Notes
If using a thinner fish like Tilapia, reduce the cook time by about 1 minute per side. Serve with steamed green beans or a simple side salad for a complete meal.
Equipment that helps
- Cast Iron or Heavy Skillet — A heavy bottom holds heat consistently, ensuring the fish sears rather than sticking.
