Lemon Garlic Grilled Seafood Platter

Ingredients
- 1.5 lb firm white fish fillets (like cod or halibut)
- 1 lb large shrimp, peeled and deveined
- 4 unit cloves garlic, minced
- 3 tbsp extra virgin olive oil
- 1 unit lemon — juiced and zested
- 1 tsp dried oregano
- 0.5 tsp red pepper flakes — optional for heat
- 1 pinch salt
- 1 pinch black pepper
Method
- 1 Preheat your oven to 400°F or prepare a grill/griddle over medium-high heat.
- 2 In a large bowl or on a sheet pan, toss the fish and shrimp with olive oil, lemon juice, zest, minced garlic, oregano, salt, pepper, and red pepper flakes.
- 3 Spread the seafood out in a single layer. Do not crowd them, or they will steam instead of roasting/grilling.
- 4 Cook for 8-12 minutes (depending on your heat source) until the fish flakes easily with a fork and shrimp are opaque and firm.
- 5 Squeeze any remaining lemon over the platter before serving.
Variations
- Vegetarian Swap — Replace the fish and shrimp with thick slices of zucchini and halloumi cheese.
- Extra Flavor — Add a handful of cherry tomatoes to the pan; they will burst and create a light sauce.
Notes
If using an oven, a sheet pan is great because it keeps everything in one place. If grilling, ensure the grill is well-oiled to prevent sticking.
