We all know that traditional dolmas are divine, but the labor of rolling dozens of grape leaves is a lot when you've had a long day. This version gives you that exact same flavor profile—herby, lemony, and savory—without the manual labor. By tossing your protein and aromatics directly into a skillet or baking dish with a touch of tomato and herbs, you get all the Mediterranean magic in one pan. It’s hearty, comforting, and feels sophisticated even though it took almost zero effort to assemble. Just pick a spoon and enjoy.

Ingredients

  • 1.5 lb shrimp or firm white fish chunks
  • 1 cup diced tomatoes
  • 3 unit garlic cloves, minced
  • 0.5 cup onion, diced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried mint
  • 1 tbsp lemon juice
  • 0.5 cup fresh parsley, chopped
  • 1 pinch red pepper flakes (optional)

Method

  1. 1 Preheat your oven to 400°F or heat a large heavy-bottomed skillet over medium-high heat.
  2. 2 In the pan, combine the onion and garlic with olive oil. Sauté for about 3 minutes until fragrant.
  3. 3 Add the diced tomatoes, oregano, mint, and red pepper flakes. Stir and simmer for 5 minutes to let flavors meld.
  4. 4 Fold in the seafood, parsley, and lemon juice.
  5. 5 Cook everything together: if using a skillet, cook for 8-10 minutes; if using an oven-safe dish, bake for 12-15 minutes until seafood is opaque and cooked through.
  6. 6 Season with salt and pepper to taste before serving.

Variations

  • Vegetarian Swap — Replace the seafood with 1 block of firm tofu (cubed) or chickpeas.
  • Faster Sauté — Skip the oven and cook everything in a large skillet for a faster, hot-from-the-stove finish.

Notes

If you prefer a bit of crunch, top the final dish with toasted pine nuts or some crumbled feta cheese just before serving.

Equipment that helps

  • Large Skillet — Allows you to sear the aromatics and cook the seafood all in one vessel.
