It leans on rotisserie chicken (or any cooked chicken you have), a solid Caesar dressing, and a flour tortilla to hold it all together. No cooking, barely any chopping, and cleanup is almost nothing. Expect a cold, crunchy, satisfying dinner that feels more put-together than it has any right to be on a weeknight. Great for one or easily scaled for the whole table.

Ingredients

  • 2 unit large flour tortillas — 10-inch burrito size works best
  • 2 cup rotisserie chicken — shredded or roughly chopped
  • 3 cup romaine lettuce — chopped into bite-sized pieces
  • 0.33 cup Caesar dressing — store-bought is totally fine
  • 0.33 cup shredded Parmesan cheese
  • 0.5 cup croutons — roughly crushed for easier wrapping
  • 1 tsp black pepper — freshly ground if you have it
  • 1 tsp lemon juice — fresh or bottled, just a quick squeeze

Method

  1. 1 Warm the tortillas: lay them flat in a dry skillet over medium heat for about 30–45 seconds per side, or microwave each one for 20 seconds wrapped in a damp paper towel. This makes them pliable and less likely to crack when you roll.
  2. 2 In a medium bowl, combine the shredded chicken, romaine lettuce, Caesar dressing, Parmesan, and lemon juice. Toss until everything is evenly coated.
  3. 3 Taste the mixture and add black pepper to your liking. If it needs more dressing, add another splash.
  4. 4 Lay a warmed tortilla flat. Spoon half the Caesar mixture down the center, leaving about 2 inches clear on each side. Scatter half the crushed croutons over the top.
  5. 5 Fold in the sides of the tortilla, then roll from the bottom up tightly, keeping the filling contained. Repeat with the second wrap.
  6. 6 Slice each wrap in half on a diagonal and serve immediately. If you want a little char, place the seam-side down in the warm skillet for 1 minute to seal and crisp slightly.

Variations

  • Vegetarian Swap — Replace the chicken with a drained, rinsed can of chickpeas tossed in a little olive oil and salt, or use sliced hard-boiled eggs. The Caesar dressing carries the flavor — you won't miss the meat.
  • Even Faster (5-Minute) Version — Skip warming the tortillas and use pre-washed bagged romaine. Buy pre-shredded rotisserie chicken from the deli. The whole thing comes together in about 5 minutes with zero dishes beyond a bowl.
  • Add Some Heat — Toss the chicken in a teaspoon of hot sauce before mixing, or add a few pickled jalapeño slices to the wrap. Spicy Caesar wraps are genuinely great and take zero extra effort.

Notes

The key to a wrap that doesn't fall apart is not overdressing the filling — start with less Caesar dressing than you think you need, toss, and add more if it looks dry. Crushing the croutons before adding them makes rolling much easier and keeps them in the wrap instead of poking through. Store assembled wraps tightly in foil if making ahead, but the lettuce will soften after a couple of hours, so same-day is best.
