When you're exhausted but craving something substantial, these falafel wraps are your best friend. By using high-quality frozen falafels, we skip the tedious grinding and simmering of chickpea patties while keeping that authentic street-food flavor. The combination of crispy falafel and a creamy tahini dressing provides a satisfying contrast in every bite. It takes less than 20 minutes from start to finish, making it an ideal choice for those busy weeknights when you need a win fast. You'll love the earthy notes of cumin mixed with the fresh crunch of cucumbers. Just grab your favorite wrap or pita and dive into this low-effort, high-reward dinner.

Ingredients

  • 8 unit frozen falafel patties — thawed slightly or cooked as is
  • 4 unit large flour tortillas — or pita bread
  • 0.25 cup tahini
  • 3 tbsp lemon juice
  • 1 unit garlic — minced
  • 0.5 cup cucumber — diced
  • 1 cup cherry tomatoes — halved
  • 2 tbsp olive oil
  • 1 pinch cumin

Method

  1. 1 Preheat your oven or air fryer. Bake or air-fry the falafel patties at 400°F for about 8-10 minutes until golden and crispy.
  2. 2 While falafels cook, whisk together tahini, lemon juice, minced garlic, a pinch of cumin, and 2 tbsp of water to create a creamy dressing.
  3. 3 In a small bowl, toss the diced cucumbers and halved cherry tomatoes with 1 tbsp of olive oil and a pinch of salt.
  4. 4 Warm the tortillas in a dry skillet over medium heat for 30 seconds per side.
  5. 5 Spread a generous spoonful of tahini sauce on each tortilla, add 4 falafels, top with the cucumber and tomato mixture, and wrap tightly.

Variations

  • Extra Veggie — Add sliced radishes or shredded carrots for extra crunch.
  • No Tahini Swap — Substitute the tahini with a dollop of hummus and a drizzle of olive oil.

Notes

If you prefer extra crunch, lightly toast the pita bread in the oven for 2 minutes before assembling.

Equipment that helps

  • Mixing bowl — Makes combining the dressing ingredients much faster than doing it in a measuring cup.
  • Skillet — Perfect for quickly warming and softening the tortillas before rolling.
