Ingredients
- 8 unit frozen falafel patties — thawed slightly or cooked as is
- 4 unit large flour tortillas — or pita bread
- 0.25 cup tahini
- 3 tbsp lemon juice
- 1 unit garlic — minced
- 0.5 cup cucumber — diced
- 1 cup cherry tomatoes — halved
- 2 tbsp olive oil
- 1 pinch cumin
Method
- 1 Preheat your oven or air fryer. Bake or air-fry the falafel patties at 400°F for about 8-10 minutes until golden and crispy.
- 2 While falafels cook, whisk together tahini, lemon juice, minced garlic, a pinch of cumin, and 2 tbsp of water to create a creamy dressing.
- 3 In a small bowl, toss the diced cucumbers and halved cherry tomatoes with 1 tbsp of olive oil and a pinch of salt.
- 4 Warm the tortillas in a dry skillet over medium heat for 30 seconds per side.
- 5 Spread a generous spoonful of tahini sauce on each tortilla, add 4 falafels, top with the cucumber and tomato mixture, and wrap tightly.
Variations
- Extra Veggie — Add sliced radishes or shredded carrots for extra crunch.
- No Tahini Swap — Substitute the tahini with a dollop of hummus and a drizzle of olive oil.
Notes
If you prefer extra crunch, lightly toast the pita bread in the oven for 2 minutes before assembling.
Equipment that helps
- Mixing bowl — Makes combining the dressing ingredients much faster than doing it in a measuring cup.
- Skillet — Perfect for quickly warming and softening the tortillas before rolling.
