Quick Garlic Butter Steak Bites Ready in 15 Minutes

It's a weeknight, you're tired, and you want something that actually feels like a real dinner — not sad cereal. These garlic butter steak bites are the answer. Bite-sized pieces of beef sear fast in a screaming-hot skillet, then get tossed in foamy garlic butter that coats every edge. You're looking at about 15 minutes start to finish, one pan to wash, and a plate that genuinely impresses. Don't skip patting the beef dry — it's the one step that makes the difference between a sear and a steam. Serve over rice, with crusty bread, or just straight from the pan.
Ingredients
- 1 lb sirloin steak — cut into 1-inch cubes, patted very dry with paper towels
- 1 tsp kosher salt
- 0.5 tsp black pepper — freshly ground
- 0.5 tsp garlic powder
- 1 tbsp neutral oil — vegetable, canola, or avocado oil — something with a high smoke point
- 3 tbsp unsalted butter — divided
- 4 unit garlic cloves — minced or pressed
- 1 tsp fresh thyme leaves — or 1/4 tsp dried thyme
- 1 tbsp fresh parsley — roughly chopped, for finishing
- 0.5 tsp crushed red pepper flakes — optional, for a little heat
Method
- 1 Pat the steak cubes thoroughly dry with paper towels — this is non-negotiable for a good sear. Season evenly with salt, black pepper, and garlic powder.
- 2 Heat a large cast-iron or stainless skillet over high heat for 2 minutes until very hot. Add the oil and swirl to coat.
- 3 Add the steak bites in a single layer — don't crowd them. Work in two batches if needed. Sear without moving for 60–90 seconds until a deep brown crust forms on the bottom.
- 4 Flip each piece and sear the other side for another 60 seconds. The steak should be medium to medium-rare at this point. Remove steak to a plate and tent loosely with foil.
- 5 Reduce heat to medium-low. Add 1 tbsp of the butter to the same pan. Once melted, add the minced garlic and thyme. Cook, stirring constantly, for 30–45 seconds until fragrant — watch it closely so it doesn't burn.
- 6 Add the remaining 2 tbsp butter and let it melt, swirling the pan to combine with the garlic.
- 7 Return the steak bites to the pan and toss to coat in the garlic butter for about 30 seconds. Remove from heat immediately.
- 8 Transfer to a serving plate, spoon any remaining pan butter over the top, and finish with fresh parsley and red pepper flakes if using. Serve right away.
Variations
- Vegetarian swap: Portobello mushroom bites — Cut large portobello mushrooms into 1-inch chunks and use the exact same method. Pat dry, season, sear in a very hot pan — they'll get a satisfying crust. The garlic butter finish works perfectly and is arguably even better on mushrooms.
- Faster swap: pre-cut beef tips — Buy pre-cut beef stew meat or beef tips from the grocery store to skip all the cutting. Just pat dry and season — you'll shave 3–4 minutes off the prep time.
- No fresh garlic: garlic butter shortcut — Use store-bought garlic herb butter (like Kerrygold with herbs) instead of making your own. Skip the garlic and thyme entirely and just finish the steak in 2–3 tbsp of the compound butter. Tastes great and saves a step.
Notes
Sirloin is the best value here — it sears beautifully and doesn't get tough fast. Ribeye works if you want richer flavor. The biggest mistake people make is not getting the pan hot enough before adding the oil; a properly preheated pan is what creates the crust. If your steak bites are releasing a lot of liquid in the pan, that means they weren't dry enough or the pan wasn't hot enough — pull them out and let the liquid evaporate before adding butter. Leftovers reheat decently in a hot skillet for 60 seconds but will cook further, so medium-rare becomes medium.
