Quick Lamb Tagine

Ingredients
- 1.5 lb lamb shoulder or stew meat — cut into 1-inch cubes
- 2 tbsp olive oil
- 1 unit large onion — finely diced
- 3 unit garlic cloves — minced
- 1 tsp ground ginger
- 1.5 tsp ground cumin
- 0.5 tsp cinnamon
- 1 pinch cayenne pepper
- 2 cup beef broth
- 0.5 cup dried apricots or prunes
- 1 tsp salt
Method
- 1 Pat the lamb dry and season with salt. In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat.
- 2 Brown the lamb in batches until no longer pink on the outside. Remove the meat and set it aside, leaving the rendered fat in the pot.
- 3 Add the onion to the pot and sauté for 5 minutes until softened. Stir in the garlic, ginger, cumin, cinnamon, and cayenne pepper; cook for 1 minute until fragrant.
- 4 Return the lamb to the pot and stir to coat with the spice mixture.
- 5 Pour in the beef broth and add the dried fruit. Bring to a boil, then reduce heat to low simmer.
- 6 Cover and simmer for 25-30 minutes, or until the lamb is tender and the sauce has thickened slightly.
- 7 Taste and adjust salt before serving.
