It hits all the flavor notes—salty, sweet, and tangy—without requiring hours in the kitchen or a massive grocery haul. We use firm tofu to give it that satisfying bite against the noodles. Ingredients

  • 8 oz firm tofu — pressed and cubed
  • 4 oz rice noodles — thin variety, soaked in hot water first
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp ginger, minced
  • 2 cup bean sprouts
  • 1 tbsp oil — vegetable or avocado oil

Method

  1. 1 Press the tofu to remove excess moisture and cut into small cubes. Heat 1/2 tbsp of oil in a large skillet over medium-high heat.
  2. 2 Add the tofu cubes to the pan and sauté for 5-7 minutes until golden on all sides. Remove tofu from the pan and set aside.
  3. 3 In the same pan, add the remaining oil and sauté the garlic and ginger for 1 minute until fragrant.
  4. 4 Stir in the soy sauce, lime juice, and brown sugar. Let it bubble for 30 seconds to combine.
  5. 5 Add the drained noodles and bean sprouts to the sauce. Toss everything together for 2-3 minutes until the noodles are coated and hot.
  6. 6 Fold the cooked tofu back into the pan and toss one last time before serving.

Variations

  • Extra Veggie Boost — Toss in a handful of shredded carrots or sliced bell peppers during the sauté step.
  • Crunchy Topping — Garnish with crushed peanuts and fresh cilantro just before serving for added texture.

Notes

For a more authentic flavor, you can add a pinch of crushed red pepper flakes if you like some heat.
