Ingredients
- 1.5 lb large shrimp — peeled and deveined
- 1 cup egg noodles
- 14 oz coconut milk
- 2 cup chicken broth
- 2 tbsp Thai red curry paste
- 1 tsp fresh ginger — grated or finely minced
- 1 tsp garlic — minced
- 1 tsp turmeric — ground
- 0.5 cup spinach — optional for color
- 1 tsp lime juice
Method
- 1 In a large pot or deep skillet, sauté the garlic, ginger, and turmeric over medium heat for 2 minutes until fragrant.
- 2 Stir in the red curry paste and cook for another 1-2 minutes to wake up the spices. It should smell amazing!
- 3 Pour in the coconut milk and chicken broth. Bring the mixture to a gentle simmer, then reduce heat to low.
- 4 Cook the egg noodles directly in the simmering broth for about 6-8 minutes (or according to package instructions) until tender.
- 5 In the last 3 minutes of cooking, add the shrimp and spinach. Stir occasionally until the shrimp turn pink and opaque.
- 6 Stir in the lime juice, season with a pinch of salt if needed, and serve immediately in deep bowls.
Variations
- Veggie Version — Swap the shrimp for cubed firm tofu and increase the amount of spinach to 2 cups.
- Extra Hearty — Add a handful of frozen peas or sliced mushrooms during the simmering step.
Notes
If you want extra authenticity, top your bowl with a drizzle of chili oil or some crushed peanuts before serving.
Equipment that helps
- Large Pot — Allows you to cook the noodles directly in the broth for maximum flavor and fewer dishes.
