Ingredients
- 8 oz large shrimp — peeled and deveed
- 4 oz rice noodles — soak in hot water for 10 mins before cooking
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 tsp garlic powder
- 1 tsp ginger, minced
- 2 tbsp neutral oil
- 0.5 cup scallions — sliced
- 2 tbsp crushed peanuts
- 1 unit lime — juiced
Method
- 1 Soak the rice noodles in a large bowl of hot water for about 10 minutes until pliable but still firm. Drain and set aside.
- 2 In a small bowl, whisk together soy sauce, fish sauce, brown sugar, garlic powder, and ginger to create your flavor base.
- 3 Heat oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for 2 minutes until pink.
- 4 Add the drained noodles and the sauce mixture to the skillet. Toss vigorously with tongs for 3-4 minutes until the noodles absorb the liquid.
- 5 Toss in the scallions, peanuts, and lime juice. Give it one final toss and serve immediately.
Variations
- Vegetarian Swap — Replace the shrimp with extra firm tofu cubes and swap fish sauce for a splash of aminos.
- Extra Veggie Boost — Add a handful of baby spinach at the very end until just wilted.
Notes
If you have extra time, throw in some shredded carrots or bean sprouts during step 4 for an extra crunch.
Equipment that helps
- Large Skillet — Allows for quick tossing and even heat distribution for the noodles.
- Tongs — Easier than a spatula for quickly mixing and flipping noodles in a hot pan.
