Ingredients

  • 1 tbsp Lemon juice
  • 2 tbsp Olive oil
  • 1 tsp Dried oregano
  • 0.5 cup Breadcrumbs — panko works great for extra crunch
  • 1 pinch Salt
  • 1 pinch Black pepper

Method

  1. 1 Preheat your oven to 400°F. Line a large baking sheet with parchment paper for easy cleanup.
  2. 2 Toss the scooped zucchini halves with 1 tablespoon of olive oil and a pinch of salt/pepper. Arrange them on the baking sheet.
  3. 3 In a medium bowl, combine the shrimp, chopped fish, minced garlic, lemon juice, remaining olive oil, oregano, and breadcrumbs.
