Shrimp and Ginger Spring Rolls
Craving something crispy and satisfying without the long prep time?
When you're exhausted but still want a dinner that feels like a treat, these shrimp and ginger spring rolls are your best friend. They hit that perfect sweet spot of savory flavors and satisfying crunch without requiring hours in the kitchen. By using a quick sauté method for the filling, we cut out the heavy prep work while keeping all the bold notes of ginger and garlic. The result is a high-reward meal that feels like takeout but is ready in no time. Serve them with a simple dipping sauce, and you can relax on the couch knowing dinner is done. That first bite provides that unmistakable satisfying crunch that makes everything better.
Ingredients
- 1 lb shrimp — peeled and deveined
- 2 unit ginger — grated or finely minced
- 4 unit garlic cloves — minced
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1 pinch white pepper
- 8 unit spring roll wrappers — found in the freezer section
- 2 tbsp vegetable oil — for frying
Method
- 1 In a large bowl, toss the shrimp with ginger, garlic, soy sauce, sesame oil, and white pepper. Let it marinate for 5 minutes while you prep.
- 2 Heat 2 tbsp of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp mixture and stir-fry until the shrimp are pink and cooked through (about 5-6 minutes).
- 3 Drain any excess liquid from the shrimp and let it cool slightly for a few minutes.
- 4 Place one wrapper on a clean surface. Place about 2-3 tablespoons of the shrimp mixture in the center.
- 5 Fold the sides of the wrapper over the filling and roll it up tightly. Seal the edge with a dab of water or cornstarch paste.
- 6 Heat another 1-2 tablespoons of oil in a heavy-bottomed skillet or wok. Fry the rolls in batches for 3-4 minutes, turning occasionally, until golden brown and crispy.
Variations
- Veggie Swap — Replace the shrimp with finely chopped mushrooms and shredded carrots.
- Faster Fry — Use an air fryer at 375°F for 10 minutes to get that crunch without the stovetop work.
Notes
If you are short on time, you can bake the wrapped rolls at 400°F for 12-15 minutes until crisp instead of frying.
Equipment that helps
- Large Skillet — Ensures even browning of the rolls and quick cooking of the shrimp.
- Mixing Bowl — Allows you to coat all ingredients evenly before hitting the heat.
