Slow-Roasted Turkey & Root Vegetable Roast
Craving comfort? This slow-roasted turkey is the ultimate 'set it and forget it' cozy dinner.
When you've had a long day, the last thing you want to do is hover over a hot stove. This roast is designed for exactly that moment—it’s low-effort but high-reward. By roasting the turkey with root vegetables in one large pan, you create a deeply savory depth of flavor while the oven does all the heavy lifting for you. The turkey stays incredibly moist because of the slow roast, and the veggies soak up all those delicious juices. It's the ultimate comfort food that fills your kitchen with an amazing aroma, making it feel like a special occasion even on a Tuesday night. Just toss everything in, set the timer, and relax while dinner cooks itself.
Ingredients
- 2 lb turkey roast_or_breast meat
- 1.5 lb carrots — chopped into large chunks
- 1 lb potatoes — cubed
- 2 tbsp olive oil
- 1 tsp dried rosemary
- 1 tsp garlic powder
- 1 tsp salt
- 0.5 tsp black pepper
Method
- 1 Preheat your oven to 325°F.
- 2 In a large roasting pan or heavy baking dish, toss the chopped carrots and potatoes with olive oil, rosemary, garlic powder, salt, and pepper.
- 3 Place the turkey roast in the center of the vegetables. Drizzle a little extra oil over the meat.
- 4 Cover the pan with foil (if using a small piece of poultry) or leave uncovered for a large roast to ensure even browning.
- 5 Roast in the oven for 40 minutes (or until internal temperature reaches 165°F).
- 6 Let the meat rest for 5 minutes before carving and serving.
Variations
- Vegetarian Swap — Replace the turkey with a large head of roasted cauliflower tossed in smoked paprika.
- Quick Prep — Use pre-cut frozen medley of vegetables to skip the chopping step entirely.
Notes
If using a pre-cooked rotisserie turkey to save even more time, just toss the meat with the spices and veggies and roast at 400°F for 20 minutes until hot.
Equipment that helps
- Roasting Pan — Allows the meat and vegetables to cook together in one vessel for maximum flavor.
- Meat Thermometer — Ensures your turkey is perfectly cooked without any guesswork.
