When the day feels long and your energy is low, a warm sandwich is the ultimate hug in food form. These turkey meatballs provide a lighter take on the classic Italian sub without sacrificing that rich, savory satisfaction you crave at 6 PM. By using pre-made frozen meatballs (the ultimate tired-person hack) and a quick simmered sauce, we cut out the heavy lifting of meat prep while keeping the flavor high. The result is a gooey, comforting meal that feels like a treat but takes very little effort to assemble. Just toast those rolls for a few minutes to get that perfect crunch against the tender meat.

Ingredients

  • 1.5 lb Turkey meatballs — Frozen is perfectly fine and saves time
  • 24 oz Marinara sauce — Your favorite jarred brand
  • 4 unit Sub rolls — Hoagie style
  • 2 unit Garlic — Minced
  • 1 tsp Dried oregano — Optional for extra depth
  • 0.5 cup Mozzarella cheese — Shredded
  • 1 pinch Red pepper flakes — Optional for a tiny kick

Method

  1. 1 Preheat your oven to 375°F. If using frozen meatballs, you can skip this if they are already thawed or just simmer them longer in the sauce.
  2. 2 In a large skillet or pot, combine the marinara sauce, minced garlic, oregano, and red pepper flakes. Bring to a gentle simmer over medium heat.
  3. 3 Add the turkey meatballs to the sauce. Cover and simmer for 15-20 minutes, or until the internal temperature of the meat reaches 165°F.
  4. 4 While the meatballs simmer, split the sub rolls and place them on a baking sheet. Sprinkle with a little garlic powder or just set aside.
  5. 5 Once the meatballs are cooked, spoon a generous amount of sauce and two meatballs into each roll.
  6. 6 Top with shredded mozzarella and pop under the broiler for 2-3 minutes until the cheese is bubbly and slightly browned.
  7. 7 Serve immediately while the bread is still warm and the cheese is gooey.

Variations

  • Extra Cheesy — Add a mix of mozzarella and parmesan for a sharper, more complex cheese flavor.
  • Veggie Boost — Stir in a handful of fresh spinach at the very end until wilted to add some greens to your sub.

Notes

For an extra layer of flavor, brush the inside of the rolls with a little melted butter before adding the meatballs.

Equipment that helps

  • Large Skillet — Allows for easy simmering of meatballs and sauce in one vessel.
  • Baking Sheet — Provides a stable surface for toasting the rolls under the broiler.
