When you've had a long day and just want something nourishing without spending hours over a hot stove, this chickpea tagine is your best friend. It leans into the classic Moroccan tradition of slow-simmered flavors but is streamlined for a modern, busy evening. The combination of earthy cumin, warm cinnamon, and rich spices creates an incredible depth of flavor that makes the house smell amazing. Because it relies on pantry staples like canned chickpeas and dry spices, you won't have to hunt for specialty items at the store. It’s thick, satisfying, and stays delicious even if you have leftovers for lunch tomorrow. The secret is letting those spices bloom in the oil at the start to unlock their full potential.

Ingredients

  • 2 unit chickpeas — drained and rinsed
  • 1 lb sweet potatoes — peeled and cubed
  • 3 unit garlic — minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground ginger
  • 1 pinch cinnamon
  • 0.5 tsp turmeric
  • 2 cup vegetable broth
  • 1 cup canned diced tomatoes
  • 2 tbsp olive oil

Method

  1. 1 Heat the olive oil in a large pot or heavy-bottomed Dutch oven over medium heat.
  2. 2 Add the minced garlic and all dry spices (cumin, coriander, ginger, cinnamon, turmeric). Sauté for 1-2 minutes until fragrant.
  3. 3 Stir in the cubed sweet potatoes and toss to coat thoroughly with the spiced oil.
  4. 4 Pour in the diced tomatoes (with their juices), the drained chickpeas, and the vegetable broth.
  5. 5 Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes until the sweet potatoes are tender.
  6. 6 Stir in a handful of fresh spinach or chopped parsley if desired, and season with salt and pepper to taste.

Variations

  • Faster Prep — Use pre-chopped frozen sweet potatoes to skip the peeling and dicing step entirely.
  • Add a Protein Boost — Add 1 lb of cubed chicken breast or firm tofu cubes during the sauté step with the garlic.

Notes

For an extra kick of flavor, add a pinch of cayenne pepper or a pinch of red chili flakes during the spice sauté step.

Equipment that helps

  • Large Pot — Allows for easy stirring and even heat distribution throughout the stew.
