Ingredients
- 1 lb Extra-firm tofu — Pressed and cubed into 1-inch pieces
- 0.5 cup Taco seasoning mix — Store-bought is perfectly fine
- 1 cup Black beans — Drained and rinsed
- 1 cup Rice — Pre-cooked or instant
- 0.5 cup Salsa — Your favorite variety
Method
- 1 Press the tofu for 10 minutes to remove excess moisture, then cut into cubes.
- 2 Heat a large skillet over medium-high heat with a splash of oil.
- 3 Add the tofu cubes to the skillet and sear until golden on all sides (about 8-10 minutes).
- 4 Stir in the taco seasoning and the black beans. Cook for another 3-5 minutes until heated through.
- 5 While the tofu cooks, prep your base: portion out the rice into four bowls.
- 6 Top each bowl with a generous amount of the tofu and bean mixture.
