Hearty Tofu and Vegetable Stew

It mimics the soul-soothing depth of a classic rustic stew but uses tofu to keep things light and easy on the conscience. Ingredients
- 14 oz Extra-firm tofu — Pressed and cubed
- 2 cup Vegetable broth — Low sodium preferred
- 3 cup Chopped carrots
- 2 cup Diced potatoes — Yukon Gold work great
- 1 cup Canned diced tomatoes — Undrained
- 3 unit Garlic — Minced
- 1 tsp Dried thyme
- 1 tsp Dried rosemary
- 1 tsp Salt — Or to taste
- 0.5 tsp Black pepper
Method
- 1 In a large pot or Dutch oven, heat a splash of oil over medium heat. Add the cubed tofu and sear until golden on all sides (about 8 minutes). Remove tofu and set aside.
- 2 In the same pot, add the diced potatoes and carrots. Sauté for 5-7 minutes until they begin to soften slightly.
- 3 Stir in the minced garlic, thyme, rosemary, salt, and pepper. Cook for 1 minute until fragrant.
- 4 Add the diced tomatoes (with their juice) and the vegetable broth. Bring the mixture to a boil.
- 5 Reduce heat to low, stir in the seared tofu, cover, and simmer for 20-25 minutes until the potatoes are tender.
- 6 Taste and adjust seasoning before serving hot.
Variations
- Faster Version — Use pre-chopped frozen vegetables and a microwave_ready diced potato to cut prep time by 10 minutes.
- Hearty Veggie Boost — Add a handful of baby spinach or kale at the very end until wilted for extra nutrients.
Notes
If you want a thicker consistency, mix 1 tbsp of cornstarch with 2 tbsp of water and stir into the pot during the last 5 minutes of simmering.
