When you've had a long day and just want something warm, filling, and deeply satisfying, this tofu and vegetable stew is your best friend. It mimics the soul-soothing depth of a classic rustic stew but uses tofu to keep things light and easy on the conscience. Because it’s a one-pot wonder, cleanup is minimal, which is exactly what you need when your energy is low. The secret is the slow simmer of root vegetables and savory broth, creating a thick, comforting consistency that feels like a culinary hug. Serve it with a piece of crusty bread to soak up every last drop of the rich, herb-infused gravy. It's simple, rustic, and guaranteed to make your kitchen smell amazing while you unwind.

Ingredients

  • 14 oz Extra-firm tofu — Pressed and cubed
  • 2 cup Vegetable broth — Low sodium preferred
  • 3 cup Chopped carrots
  • 2 cup Diced potatoes — Yukon Gold work great
  • 1 cup Canned diced tomatoes — Undrained
  • 3 unit Garlic — Minced
  • 1 tsp Dried thyme
  • 1 tsp Dried rosemary
  • 1 tsp Salt — Or to taste
  • 0.5 tsp Black pepper

Method

  1. 1 In a large pot or Dutch oven, heat a splash of oil over medium heat. Add the cubed tofu and sear until golden on all sides (about 8 minutes). Remove tofu and set aside.
  2. 2 In the same pot, add the diced potatoes and carrots. Sauté for 5-7 minutes until they begin to soften slightly.
  3. 3 Stir in the minced garlic, thyme, rosemary, salt, and pepper. Cook for 1 minute until fragrant.
  4. 4 Add the diced tomatoes (with their juice) and the vegetable broth. Bring the mixture to a boil.
  5. 5 Reduce heat to low, stir in the seared tofu, cover, and simmer for 20-25 minutes until the potatoes are tender.
  6. 6 Taste and adjust seasoning before serving hot.

Variations

  • Faster Version — Use pre-chopped frozen vegetables and a microwave_ready diced potato to cut prep time by 10 minutes.
  • Hearty Veggie Boost — Add a handful of baby spinach or kale at the very end until wilted for extra nutrients.

Notes

If you want a thicker consistency, mix 1 tbsp of cornstarch with 2 tbsp of water and stir into the pot during the last 5 minutes of simmering.

Equipment that helps

  • Dutch Oven — Keeps the heat even and makes it easy to simmer everything in one vessel.
