Easy Tofu Pad Kra Pao

That’s why this Pad Kra Pao is your secret weapon. It uses simple pantry staples to create those deep, savory notes of garlic and soy, balanced with a kick of spice. The tofu soaks up all that goodness, making it incredibly satisfying. It’s fast, filling, and honestly? It tastes even better the next day if you have leftovers for lunch.
Ingredients
- 1 lb extra-firm tofu
- 4 unit garlic cloves — minced
- 1 unit shallot or small onion — finely diced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce — sub with vegetarian stir-fry sauce
- 1 tsp sugar
- 1 tsp red pepper flakes — adjust for heat
- 2 cup fresh basil leaves — Thai basil is traditional, but Italian basil works too
- 1 tsp oil — vegetable or avocado oil
Method
- 1 Press the water out of the tofu block and cut into small cubes. Pat dry with a towel.
- 2 Heat 1/2 tbsp of oil in a large skillet over medium-high heat. Fry tofu until golden on all sides, then remove from pan and set aside.
- 3 In the same pan, add remaining oil. Sauté the diced shallot and minced garlic for about 2 minutes until fragrant.
- 4 Stir in the soy sauce, oyster sauce (or veg substitute), sugar, and red pepper flakes. Let it bubble for 30 seconds.
- 5 Add the cooked tofu back into the pan and toss to coat thoroughly with the sauce.
- 6 Toss in the basil leaves and cook for just 1 minute until they wilt slightly.
- 7 Serve immediately over a hot scoop of rice.
Variations
- The 'Extra Spicy' Version — Add a minced Thai bird's eye chili with the garlic if you want that authentic kick.
- Quick Pantry Swap — Substitute fresh basil with 1/2 tsp of dried herbs if you can't find fresh greens.
Notes
If you want extra crunch, toss the tofu cubes in a little cornstarch before frying. It makes the sauce cling to them even better!
