Garlic Butter Molejo (Black Cod)
The ultimate 'I need comfort now' meal. It’s buttery, savory, and takes less than 30 minutes to prep.
When you've had a long day, the last thing you want is a complicated recipe that requires constant attention. This Garlic Butter Molejo is your secret weapon because it transforms a simple fillet of black cod into something decadent and deeply satisfying in record time. The high fat content of the cod makes it incredibly forgiving to cook, ensuring it stays moist while soaking up all those aromatic flavors. You'll love the way the garlic and butter create a silky sauce that coats every bite, providing that hit of comfort you crave after a hectic afternoon. There is zero fuss here—just pure, buttery goodness that feels like a high-end bistro meal served right in your pajamas. The best part? The fish cooks so quickly it won't have time to dry out before the flavors have a chance to meld perfectly.
Ingredients
- 2 unit cod fillets — approx. 6oz each
- 4 unit garlic cloves — minced
- 3 tbsp butter — unsalted
- 1 tbsp olive oil
- 1 tsp dried oregano
- 0.5 tsp salt
- 0.25 tsp black pepper
- 1 tsp lemon juice — fresh is best
Method
- 1 Pat the cod fillets completely dry with paper towels. Season both sides generously with salt, pepper, and dried oregano.
- 2 Heat the olive oil in a large skillet over medium-high heat. Once shimmering, add the fish and sear for 3-4 minutes until a golden crust forms.
- 3 Reduce heat to medium. Flip the fillets carefully and cook for another 3 minutes.
- 4 In the last 2 minutes of cooking, add the butter and minced garlic to the pan.
- 5 Baste the fish with the melting butter and garlic. Once the butter is bubbly and fragrant (about 1-2 minutes), stir in the lemon juice.
- 6 Remove from heat and let rest for 1 minute before serving.
Variations
- Speedy Version — Skip the searing and roast the seasoned fish in a 400°F oven for 10-12 minutes before tossing with the garlic butter.
- Herb Update — Swap the dried oregano for 1 tbsp of fresh chopped parsley or thyme for a brighter, greener finish.
Notes
If you can't find black cod, any firm white fish like halibut or even a thick piece of tilapia works beautifully with this butter sauce.
Equipment that helps
- Cast Iron Skillet — It holds heat exceptionally well, ensuring that even sear on the fish.
