When the day feels long and your energy is low, this Garlic Butter Shrimp Soba is your ultimate win. It combines the earthy, nutty flavor of buckwheat noodles with succulent shrimp tossed in a rich garlic butter sauce. I designed this specifically for those nights when you want something that feels like a gourmet treat but requires minimal effort to pull off. The buttery aroma fills your kitchen instantly, providing a comforting sensory headstart before you even take the first bite. It’s fast enough to make on a weeknight and hearty enough to satisfy your cravings without leaving you with a mountain of dishes.
Ingredients
- 8 oz large shrimp — peeled and deveined
- 6 oz soba noodles
- 4 tbsp unsalted butter
- 4 unit garlic — minced
- 1 tbsp soy sauce
- 1 tsp grated ginger
- 1 tsp honey
- 2 tsp sesame oil
- 1 pinch red pepper flakes
Method
- 1 Bring a large pot of water to boil. Cook the soba noodles according to package instructions (usually 4-6 minutes). Drain and rinse under cool water to prevent sticking.
- 2 While the pasta boils, heat the sesame oil in a large skillet or wok over medium heat.
- 3 Add the shrimp to the skillet and sear for 2 minutes until just pink. Remove shrimp from the pan and set aside.
- 4 In the same pan, melt the butter. Add the minced garlic and ginger, sautéing for about 1-2 minutes until fragrant but not browned.
- 5 Stir in the soy sauce, honey, and red pepper flakes. Let the mixture simmer for 1 minute to thicken slightly.
- 6 Add the drained noodles and the cooked shrimp back into the pan. Toss everything together for 2 minutes until the noodles are thoroughly coated in the garlic butter sauce.
- 7 Divide into two bowls and top with optional toasted sesame seeds or sliced green onions.
Variations
- Vegetarian Swap — Replace the shrimp with 1 cup of cubed firm tofu or extra sliced mushrooms.
- Extra Zesty — Add a squeeze of fresh lime juice at the very end for a bright, acidic kick.
Notes
If you don't have soba, regular spaghetti or udon noodles work beautifully as a substitute. Make sure to pat the shrimp dry before cooking to get that nice sear!
Equipment that helps
- Large Skillet — Ensures even coating of the butter sauce across all noodles.
