Hearty Lentil and Rice Mujadara

Ingredients
- 1 cup brown lentils — rinsed
- 1 cup long-grain rice — jasmine or basmati
- 3 cup water — or vegetable broth
- 2 cup yellow onion — thinly sliced
- 4 tbsp olive oil
- 1 tsp cumin — ground
- 1 tsp cinnamon — ground
- 1 tsp salt — to taste
- 1 pinch black pepper
Method
- 1 Heat the olive oil in a large pot or heavy-bottomed skillet over medium heat.
- 2 Add the sliced onions and cook for about 10–12 minutes, stirring occasionally, until they are soft and starting to turn golden brown.
- 3 Stir in the cumin, cinnamon, salt, and pepper. Cook for 1 minute until fragrant.
- 4 Add the rinsed lentils, rice, and water (or broth) to the pot.
- 5 Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20–25 minutes or until the liquid is absorbed and both rice and lentils are tender.
- 6 Remove from heat and let sit covered for 5 minutes before fluffing with a fork.
