One-Pan Skillet Köfte

Ingredients
- 1.5 lb ground beef or lamb
- 3 unit garlic cloves — minced
- 1 tsp ground cumin
- 1 tsp ground coriander

- 0.5 tsp black pepper
- 2 tbsp olive oil
- 1 tsp dried parsley
Method
- 1 In a large bowl, combine the ground meat, minced garlic, cumin, coriander, cayenne, salt, pepper, and parsley.
- 2 Mix by hand until the spices are evenly distributed (try not to overwork the meat or it will get tough).
- 3 Shape the mixture into 8-10 oval-shaped patties about 2 inches long.
- 4 Heat the olive oil in a large heavy-bottomed skillet over medium-high heat.
- 5 Add the patties to the pan, spacing them out so they don't touch.
- 6 Sear for 5-7 minutes per side until deeply browned and cooked through.
- 7 Let the meat rest for 3 minutes before serving.

Notes
