Lemon Garlic Roasted Branzino

Ingredients
- 2 unit Branzino (whole, scaled and gutted)
- 4 unit garlic cloves, smashed
- 1 unit lemon
- 2 tbsp olive oil
- 1 tsp dried oregano
- 0.5 tsp salt
- 0.25 tsp black pepper
Method
- 1 Preheat your oven to 400°F and line a heavy baking sheet with parchment paper.
- 2 Pat the fish completely dry with paper towels; this is the secret to getting that skin crispy.
- 3 In a small bowl, whisk together the olive oil, salt, pepper, and dried oregano.
- 4 Stuff the cavity of each fish with 2 smashed garlic cloves and half of a sliced lemon.
- 5 Brush the remaining oil mixture over the outside of the fish and sprinkle with any remaining herbs.
- 6 Roast in the oven for 10-12 minutes, or until the flesh is opaque and flakes easily with a fork.
- 7 Squeeze the remaining lemon half over the hot fish before serving.
