Ceviche-Style Tilapia Tacos
Craving something fresh and zingy but too tired to cook a complex meal? These tacos are your answer.
When the day feels long and you want something that tastes like a vacation but requires minimal effort, these ceviche-style tilapia tacos are your best friend. We use a quick 'cooking' method in lime juice which means no heavy pans to scrub or burners to monitor for long periods. The citrus cuts through the richness of the fish, while the fresh cilantro and jalapeño provide that hit of brightness you need after a dull day. It’s incredibly light, satisfyingly zesty, and comes together in about 20 minutes. You can even prep the topping ahead of time if you're planning your week, but honestly, it's so fast you'll probably just want to dive in right now.
Ingredients
- 1 lb tilapia fillets — skinless and boneless
- 0.5 cup lime juice — freshly squeezed is best
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tsp cumin
- 2 unit jalapeño — seeded and finely diced
- 0.5 cup cilantro — chopped
- 1 unit red onion — finely diced
- 8 unit corn tortillas
Method
- 1 Dice the tilapia into small, bite-sized cubes. Place them in a large glass bowl.
- 2 Add the lime juice, salt, pepper, cumin, jalapeño, cilantro, and red onion to the fish.
- 3 Toss everything together and let it sit for 10 minutes. The acid in the lime will 'cook' the fish and soften the onions.
- 4 While the fish sits, lightly toast your corn tortillas over a gas flame or in a dry skillet until warm.
- 5 Divide the mixture among the tortillas and top with extra cilantro if desired.
Variations
- No-Fish Option — Swap the fish for cubed firm tofu marinated in lime and cumin for a vegan-friendly version.
- Extra Spicy — Add a diced habanero or a teaspoon of your favorite hot sauce to the lime mixture.
Notes
Make sure to use fresh lime juice; bottled juice won't have that signature zing. If you want a bit of crunch, add some sliced radishes on top before serving.
Equipment that helps
- Large Glass Bowl — Glass holds up well against acidic lime juice compared to some metals.
- Chef's Knife — Essential for dicing the fish and aromatics quickly.
