When you want something deeply flavorful and comforting but don't have the energy for complex layering, this Turkey Biryani is your secret weapon. It captures those iconic notes of cardamom, cinnamon, and cumin without requiring a long simmer time or multiple pans. By using ground turkey, we cut down on prep work while keeping the heart of the dish intact. The rice absorbs all the aromatics in one pot, making cleanup a breeze for a weary evening. You can smell the toasted spices from across the room—it's warm, filling, and incredibly satisfying after a long day.

Ingredients

  • 1 lb ground turkey
  • 1.5 cup basmati rice — rinsed and drained
  • 2.5 cup chicken broth
  • 1 tbsp ginger-garlic paste
  • 1 tsp ground cumin
  • 1 tsp turmeric powder
  • 1 tsp cinnamon
  • 0.5 tsp cardamom pods — crushed slightly
  • 1 tbsp oil
  • 0.5 cup frozen peas

Method

  1. 1 Heat the oil in a large pot or Dutch oven over medium heat. Add the cardamom pods and cumin to toast for about 60 seconds until fragrant.
  2. 2 Add the ground turkey and ginger-garlic paste. Sauté for 5-7 minutes until the meat is browned and no longer pink.
  3. 3 Stir in the turmeric, cinnamon, and salt (to taste). Add the frozen peas and stir well to coat everything in the spices.
  4. 4 Pour in the rinsed rice and the chicken broth. Stir once to combine all ingredients evenly.
  5. 5 Bring the mixture to a boil, then reduce heat to low. Cover with a tight-fitting lid and simmer for 15-18 minutes until the liquid is absorbed and rice is tender.
  6. 6 Remove from heat and let sit covered for 5 minutes before fluffing with a fork.

Variations

  • Vegetarian Swap — Replace the ground turkey with 1 can (15 oz) of drained chickpeas and 1 cup of cubed sweet potatoes.
  • Extra Zesty — Add a handful of fresh cilantro and a squeeze of lime juice just before serving for a bright, fresh finish.

Notes

For an extra kick of flavor, add a pinch of cayenne pepper or red chili flakes along with the other spices. Using pre-made ginger-garlic paste is the ultimate shortcut for tired cooks.

Equipment that helps

  • Large Pot or Dutch Oven — Allows you to cook the meat, rice, and spices in one vessel to minimize cleanup.
